These can be a phenomenal addition to any permaculture site as long as you consider two important cultural facts. The first point is they can spread and need to be placed in an area where this is not a consideration. The second point is that they need to be harvested yearly or the quality and size of the tubers will diminish. One plant, in good soil, can yield well over 10 lbs. They are best eaten after frost and can be dug all winter up thru spring. They do not store long once dug. Use as you would any root vegetable in soups or stir-fry. Can be very sweet!
