These tubers have a long history as a food source in North America. The Native Americans showed early colonists how to forage for these to survive difficult seasons. The plants are propagated by tubers and can be spring or fall planted. They require something to grow on like shrubs, trees or a trellis. I really like the flavor and starchy texture. Excellent boiled, baked or roasted. Highly recommended! This is closer to a wild selection and produces large amounts of small 1 – 1 1/2 inch tubers.
