This plant is relate to the local weed called nutsedge, except this variety is only perennial to zone 8, and the tubers are killed by a freeze. The tiny tubers are harvested in the fall. Their flavor is reminiscent of coconut. They can be fairly hard and crunchy. The tubers can be pressed for a high quality oil. They are also used to make the drink “horchata”. This one is still in the experimental stage. Would probably work well as a container plant. They prefer moist soil conditions.
