A very strange looking vegetable indeed but very delicious! Small spreading plant is propagated by division and planting tubers. By fall the plants will have spread to form a tight clump with many hundreds of tubers formed just below the soil surface. The tubers should be yearly harvested or the quality and quantity will diminish. Protect with mulch over winter. I would also recommend planting them in an area where you are not concerned about them spreading. The tubers are small and crunchy, with a mild flavor. Excellent fresh!
